Professional Cookery (SCQF Level 5) SVQ
What is special about this course?
This SVQ Professional cookery course will give you the skills and knowledge to join this fast-moving industry.
You will spend one day a week at Shetland UHI in Lerwick with the remainder of your time in the workplace. Initially you will learn the basic cookery skills that every chef depends on before developing a wide range of skills by preparing and cooking a variety of dishes.

Entry requirements
You must be currently employed in a kitchen.
A good level of English and Maths will allow individuals to complete the course more easily.
All applicants will be interviewed.
This qualification requires a total of 14 units. Units are available individually or in groups for candidates who are interested in specific areas of training. Some essential skills are also required.
Units include:
- Maintaining a safe, hygienic and secure working environment
- Maintaining food safety when storing
- Preparing meat for basic dishes
- Preparing, cooking and finishing basic cakes, sponges and scones
- Basic grain dishes and healthier dishes
How will I study my course?
- Part Time
You will spend one day a week at Shetland UHI, in the new hospitality training kitchen. The remainder of your time will be spent in the workplace.
You will study by a combination of traditional taught classes and practical demonstrations.
Assessors will visit you regularly in your workplace where your skills will be assessed and recorded in your personal portfolio. With regular visits your portfolio will grow until you complete the qualification.

What can I do on completion of my course?
Academic: Students may progress to SVQ Professional Cookery Level 3
Employment/Career: This is a growing industry with new staff always in demand creating excellent promotion prospects. This course is linked to a work place where you will start your career as a trainee chef. Excellent employment opportunities exist in all sectors of the industry both locally and nationally.
Former students have: Developed skills which allow them to work confidently as chefs in a variety of catering establishments.
